Should the nut grade match the bolt grade?

Yes — typically the nut property class should be at least equal to the bolt property class. A grade 8.8 bolt should be paired with a class 8 (or higher) nut. Pairing a low-grade nut with a high-grade bolt can result in nut thread stripping before the bolt yields, defeating the bolt's strength.

Are DIN 934 and ISO 4032 dimensionally identical?

Almost — they differ in across-flats on a few sizes (e.g. M10 = 17 mm in DIN 934, 16 mm in ISO 4032). For most applications they are interchangeable, but if a drawing specifies one, use that one.
